Handmade edge-grain cutting boards in walnut, maple and cherry
Handmade edge-grain cutting boards, charcuterie boards and serving boards, built one at a time in Johns Creek, Georgia. I make every board individually from black walnut, hard maple and cherry after an order is confirmed. Prices start at $50.
Built to last
Every board, made to be used
A cutting board is one of the most used things in a kitchen, so I take care with every part of it: the wood, the grit the surface is finished to, and the oil that protects it.
There are no production lines here. The result is a board heavy enough not to slide, smooth enough to enjoy using, and handsome enough to leave out on the counter. Each one ships with care instructions, and the complete guide to caring for a wood cutting board covers the rest.
Sizes and prices
What a Koshur Chaan board costs: four examples, from $50 to $250+
Koshur Chaan cutting boards start at $50 for a small 4 x 12 inch edge-grain board, and a large 12 x 22 inch board with accent woods, 1.5 inches thick, starts at $250.
Every board I make is built to order in Johns Creek, so no two are priced from a shelf. These four examples show how size, wood and detail shape the price, from a simple $50 board to a showpiece board from $250. Use them as a starting point, then tell me what you need and I will send an exact quote within one business day. You pay nothing until you approve it.
The Small Board: 4 x 12 in, from $50
Small, honest and made to be used.
A slim edge-grain board in walnut, hard maple or cherry, between 3/4 and 1 inch thick. It is the size of a good loaf of bread or a wedge of cheese, and just right for slicing a lemon, a cucumber or an apple while the kettle boils. Each board is milled flat, sanded by hand through 220 grit, and finished with food-grade mineral oil and beeswax. It is the simplest way to own a handmade board, and the most useful small thing in a kitchen drawer.
Best for: quick prep, cheese for two, a first board, a thoughtful small gift.
Edge-grain · Walnut, maple or cherry · 3/4 to 1 in thick · From $50
The Everyday Prep Board: about 10 x 15 in, from $120
Roomy enough for dinner, gentle enough on your knives.
The board that lives on the counter. Wide enough to dice an onion without chasing it, heavy enough not to slide, and dense enough to take daily chopping for years. Choose a single wood, or a striped mix of walnut, maple and cherry that shows off how each one ages: walnut mellows, maple stays pale, cherry deepens toward red-brown.
Best for: daily cooking, new homeowners, closing and housewarming gifts.
Edge-grain · Single wood or striped mix · From $120
The Serving Board: about 10 x 18 in with handles or a juice groove, from $180
Built for the middle of the table.
A longer board for cheese, fruit, bread and shared plates, or for carving a roast with a juice groove that keeps the counter clean. Add finger grips or handles so it carries easily from the kitchen to the table. Wood choice, edge profile and the details you actually want are all up to you. Handles, grooves and brass feet may add to the price, and I will include them in your quote.
Best for: entertaining, wedding and anniversary gifts, holiday tables.
Edge-grain · Juice groove, grips or handles optional · From $180
The Showpiece: 12 x 22 in, accent woods, 1.5 inches thick, from $250
A board that becomes part of the room.
The largest board I build as a standard example, and the one that rewards the most care. A generous 12 x 22 surface in walnut, maple and cherry, with narrow accent stripes of purpleheart, yellowheart or bloodwood when available, and built 1.5 inches thick, well beyond my standard 3/4 to 1 inch, for real weight and stability. Every strip is chosen by hand for straight grain and sound wood, then glued, sanded through progressive grits and oiled until the color comes up. It is heavy, handsome and meant to stay out on the counter.
Best for: a wedding or retirement gift, a kitchen centerpiece, a board to hand down.
Edge-grain · Accent woods when available · 1.5 in thick · From $250
What changes the price of a board
Price follows four things, and I will explain each in your quote:
- Size. More wood and more hours at the bench.
- Wood. Walnut, hard maple and cherry are priced by species and size. Accent woods such as purpleheart, yellowheart and bloodwood are used when available and add cost.
- Thickness. A thicker board is heavier and more stable, and uses more wood.
- Details. Juice grooves, finger grips or handles, edge profiles and brass feet. Some of these may cost extra.

Board types
The boards I build
Edge-grain cutting boards
Strips of hardwood glued side by side with the long, narrow edges facing up. It is the most stable, low-maintenance construction, dense and durable for everyday cutting. Available in walnut, maple, cherry or mixed stripes.
Charcuterie and serving boards
Wider boards made for presentation: cheese, charcuterie, bread and shared plates. Often the centerpiece of the table rather than just a kitchen tool.
Custom-size boards
A board to fit a particular counter, prep area, sink span or gift. I build edge-grain boards in practical custom sizes and wood combinations. See custom size and wood options →
I don’t make end-grain boards or offer engraving. Custom work focuses on size, wood combination, edge details, juice grooves, handles and feet.
Choosing your board
Which cutting board is right for you?
For everyday prep, an edge-grain board balances durability, weight and easy care. Walnut gives a rich, dark look; maple is light and clean; cherry starts pale and deepens to a warm red-brown. Mixed boards combine those colors into stripes.
- For daily chopping: an edge-grain board at least 5 inches longer than your longest knife. For a 10-inch chef’s knife, that means 15 inches or more.
- For entertaining: a wider serving or charcuterie board with room for cheese, fruit, bread and shared dishes.
- For a gift: a practical everyday size in the wood that suits the recipient’s kitchen.
- For a specific space: a custom-size board for a counter, prep station or sink. Order a board sized to your space →

Why edge grain
Why handmade edge-grain cutting boards?
Stable by design
Long hardwood strips glued side by side make a board that stays flat and resists warping with simple care.
Low maintenance
Care is simple: hand washing, drying on edge and oil about once a month. The step-by-step wood cutting board care guide covers the rest. Kept clean, wood is no less sanitary than plastic, as a 1994 study by Ak, Cliver and Kaspar found.
Made for daily use
Walnut, maple and cherry are dense, durable and kind to knives. These boards are built for everyday chopping, not just for display.
